things that went wrong:

• forgot the resting time before cutting the log

• not enough layers

• not cooked long enough

• soggy bottom because of the syrup


jan 03: scallion star bread

things that went wrong:

• scallion mixture was a bit too watery, because of the addition of salt at the beginning

• not enough hot oil for the scallions


jan 04 – 05: caramelized onion galette

things that went wrong:

• the homemade pastry was too dry, should be hydrated a bit more, but managed to patch it up


jan 24: orange-spiced (tea & coffee masala) olive oil cake

things to improve:

• make the orange slices a bit thinner and make more layers, the cake batter seeped through the gaps

• took longer to cook, about 50-55 minutes, but might be because it was on a baking sheet, which took time to heat
