Japanese EGG SANDO
Ingredients
4 slices of soft white bread (crusts removed)
2 tbsp mayonnaise (preferably Japanese Kewpie)
1 tsp Dijon mustard
Salt and pepper, to taste

2 tbsp softened butter
2 sandwiches

Directions
Boil the Eggs:
Place eggs in a pot, cover with water, and bring to a boil. Once boiling, cook for 10 minutes. Transfer to an ice bath to cool, then peel.
Prepare Egg Mixture:
Mash the eggs in a bowl with mayonnaise, Dijon mustard, salt, and pepper until creamy.
Assemble the Sandwich:
Butter one side of each bread slice. Spread the egg mixture evenly on two slices of bread (on the unbuttered side). Top with the remaining bread slices, buttered side out.
Serve:
Cut the sandwiches in half and serve immediately.
